Ingredients

  • 1 pcCauliflower, chopped
  • 250 gPotato, cubed
  • 100 gOnion, finely chopped
  • 100 gTomato, chopped
  • 3 tbspSunflower Oil
  • 1 tspCumin Seeds
  • 1 tspGinger, grated
  • 2 pcsGreen Chillies, slit
  • ½ tspTurmeric Powder
  • 1 tspCoriander Powder
  • ½ tspRed Chilli Powder
  • ½ tspGaram Masala
  • To tasteSalt

To garnish

  • 2 tbspCoriander Leaves, finely chopped

Method

  1. Cut the cauliflower into medium florets and soak them in warm salted water for 10 minutes. Drain well. Cut the potatoes into cubes.

  2. Heat the oil, add the cumin, then the onion, ginger and green chillies, and cook until the onion is golden. Add the tomato and cook until soft.

  3. Add the turmeric, coriander powder and chilli powder and stir for 30 seconds.

  4. Add the potato and cauliflower with salt and mix well. Cover and cook on low heat for 15-18 minutes, stirring occasionally. Sprinkle a little water only if it sticks.

  5. Stir in the garam masala and coriander and serve with roti.

Tips

Keep the lid on and the heat low. The vegetables steam in their own moisture and do not turn mushy.
