Ingredients

  • 500 gBrinjal
  • 150 gOnion, finely chopped
  • 150 gTomato, chopped
  • 50 gGreen Peas (optional)
  • 5 clovesGarlic, finely chopped
  • 1 tspGinger, grated
  • 2 pcsGreen Chillies, finely chopped
  • 3 tbspSunflower Oil
  • 1 tspCumin Seeds
  • ½ tspTurmeric Powder
  • 1 tspRed Chilli Powder
  • 1 tspCoriander Powder
  • ½ tspGaram Masala
  • To tasteSalt

To garnish

  • 2 tbspCoriander Leaves, finely chopped

Method

  1. Rub the brinjal with a little oil and prick it all over with a fork. Roast it directly over a gas flame, turning often, for 10-15 minutes until the skin is charred and the flesh is completely soft. Or roast in an oven at 220°C for 35 minutes.

  2. Let it cool, peel off the skin and mash the flesh coarsely.

  3. Heat the oil, add the cumin, then the onion, ginger, garlic and green chillies, and cook until golden. Add the tomato and cook until soft.

  4. Add the turmeric, chilli powder and coriander powder, then the peas if using, and cook for 3 minutes.

  5. Add the mashed brinjal and salt and cook for 8-10 minutes, stirring. Finish with garam masala and coriander. Serve with roti.

Tips

The smoky flavour comes from the burnt skin, so do not be afraid to char it well.
