Creamy yellow toor dal finished with a sizzling ghee tempering of cumin, garlic and red chillies.

Ingredients
- 100 gToor Dal, rinsed
- ½ tspTurmeric Powder
- To tasteSalt
- 3 cupsWater
- 100 gOnion, finely chopped
- 150 gTomato, chopped
- 1 tspGinger, grated
- 1 pcGreen Chillies, slit
- ½ tspRed Chilli Powder
- 2 tbspGhee
For the tempering
- 1 tspCumin Seeds
- 4 clovesGarlic, finely chopped
- 2 pcsDry Red Chillies
- 1 pinchHing
To garnish
- 2 tbspCoriander Leaves, finely chopped
Method
Pressure cook the dal with the turmeric, salt and 3 cups of water for 4-5 whistles until soft. Whisk until smooth.
Heat 1 tablespoon of ghee in a pan. Cook the onion, ginger and green chilli until golden. Add the tomato and chilli powder and cook until mushy.
Pour in the dal. Add half a cup of hot water if it is too thick and simmer for 5-8 minutes.
For the tempering, heat the remaining ghee in a small pan. Add the cumin, dry red chillies and garlic and fry until the garlic is golden, but not burnt. Add the hing.
Pour the sizzling tempering over the dal, add coriander and serve with rice or roti.
Tips
Add the hing last. It burns in seconds and turns the whole tadka bitter.
