Ingredients
- 2 bunchesSpinach
- 200 gPaneer, cubed
- 100 gOnion, finely chopped
- 100 gTomato, chopped
- 1 tspGinger, grated
- 4 clovesGarlic, finely chopped
- 2 pcsGreen Chillies
- 2 tbspSunflower Oil
- 1 tspCumin Seeds
- ½ tspGaram Masala
- To tasteSalt
To serve
- 2 tbspFresh Cream
Method
Wash the spinach well and blanch in boiling water for 2 minutes. Drain into cold water, then blend with the green chillies into a smooth puree, using very little water.
Heat the oil, add the cumin, then the onion, and cook until golden. Add the ginger and garlic and cook for a minute. Add the tomato and cook until soft.
Add the spinach puree, salt and garam masala. Simmer for 5 minutes and no longer, to keep the colour bright.
Add the paneer and cook for 3 minutes. Stir in the cream and serve with roti or rice.
Tips
Plunging blanched spinach into cold water keeps the gravy bright green instead of army-olive.
