Ingredients
For the bhaji
- 250 gPotato, cubed
- ½ pcCauliflower, chopped
- 80 gGreen Peas
- 50 gBeetroot, cubed (optional)
- 200 gOnion, finely chopped
- 300 gTomato, chopped
- 100 gCapsicum, finely chopped
- 1 tspGinger, grated
- 5 clovesGarlic, finely chopped
- 3 tbspButter
- 2 tbspPav Bhaji Masala
- 1 tspKashmiri Chilli Powder
- To tasteSalt
To serve
- 1 packPav
- 1 tbspButter, for greasing
- 1 pcLemon
To garnish
- 2 tbspCoriander Leaves, finely chopped
Method
Pressure cook the potato, cauliflower, peas and beetroot with 1 cup of water for 3-4 whistles, until very soft. Mash coarsely.
Melt 2 tablespoons of butter in a wide pan. Cook the onion until golden. Add the ginger and garlic, then the capsicum, and cook for 3 minutes.
Add the tomatoes and cook for about 8 minutes, mashing, until they turn pulpy and the butter separates.
Add the chilli powder, pav bhaji masala and salt and cook for 2 minutes.
Add the mashed vegetables and 1 cup of water. Mash everything together and simmer for 10-15 minutes until thick, adding water if needed. Finish with the remaining butter.
Slit the pav, toast on a buttered tawa until golden, and serve with the bhaji, chopped onion, lemon and coriander.
Tips
Mash the bhaji directly in the pan with a masher as it simmers. This is what gives it the street-style texture.
