Ingredients

  • 200 gWheat Atta
  • 2 tbspWheat Atta, for dusting
  • ½ cupWater
  • To tasteSalt
  • 1 tspGhee (optional)

Method

  1. Mix the atta and a pinch of salt. Add water a little at a time and knead into a soft, smooth dough. Cover and rest for 15 minutes.

  2. Divide the dough into 8 equal balls. Dip each in dry atta and roll into a thin 6-inch round, turning as you roll for an even circle.

  3. Heat a tawa on medium-high. Cook the roti for about 20 seconds until small bubbles form, flip and cook for another 20-30 seconds.

  4. Use tongs to place the roti directly on the flame; it will puff up within seconds. Flip once to cook both sides.

  5. Smear with a little ghee if you like and keep the rotis wrapped in a clean cloth to stay soft.

Tips

A dough that is a little softer than you think and a full 15-minute rest are what make rotis puff and stay soft.
