Ingredients
- 150 gPoha, rinsed
- 150 gOnion, finely chopped
- 100 gPotato, cubed
- 25 gPeanuts
- 2 tbspSunflower Oil
- 1 tspMustard Seeds
- 1 sprigCurry Leaves
- 2 pcsGreen Chillies, finely chopped
- ½ tspTurmeric Powder
- 1 tspSugar
- To tasteSalt
- ½ pcLemon
To garnish
- 2 tbspCoriander Leaves, finely chopped
Method
Rinse the poha in a colander under running water for about 30 seconds, until soft but not mushy. Drain well, then sprinkle over the sugar, half a teaspoon of salt and the turmeric. Set aside for 10 minutes.
Heat the oil in a wide pan. Fry the peanuts on low heat until golden and crisp, then lift them out.
In the same oil, add the mustard seeds. When they crackle, add the curry leaves and green chillies.
Add the onion and cook for 3-4 minutes until soft and translucent. Add the potato, cover and cook for about 5 minutes, stirring now and then, until tender.
Add the poha and peanuts. Mix gently, cover and steam on low heat for 2 minutes.
Switch off the heat, squeeze in the lemon juice, top with coriander and serve hot.
Tips
Use thick poha, as thin poha turns pasty. Serve with fresh grated coconut or a handful of sev.
