Soft, non-sticky sago pearls tossed with roasted peanuts, potato and cumin. The classic fasting-day dish.

Ingredients
- 150 gSabudana, soaked
- 50 gPeanuts, roasted
- 150 gPotato, cubed
- 2 tbspGhee
- 1 tspCumin Seeds
- 2 pcsGreen Chillies, finely chopped
- 1 sprigCurry Leaves
- To tasteRock Salt
- 1 tspSugar
- ½ pcLemon
To garnish
- 2 tbspCoriander Leaves, finely chopped
Method
Rinse the sabudana in several changes of water until it runs clear. Soak with just enough water to cover for 4-6 hours, until a pearl squashes easily between your fingers. Drain fully.
Dry roast the peanuts, crush them coarsely, and mix with the sabudana, rock salt and sugar.
Heat the ghee, add the cumin, green chillies and curry leaves. Add the potato, cover and cook until tender.
Add the sabudana mix and stir gently on medium heat for 4-5 minutes, until the pearls turn translucent.
Squeeze in the lemon juice, add coriander and serve hot.
Tips
Sabudana must not be wet before cooking, or it clumps. Drain it in a sieve for at least 30 minutes after soaking.
